Ingredients

  • 3 Boston butts (medium)
  • 2 chickens
  • 5 large cans tomato puree
  • 2.5 lbs potatoes
  • 1.5 lbs onions
  • salt
  • black pepper
  • red pepper
  • Tabasco

Instructions

  1. Boil the pork until done, then pour off the broth and let it cool.
  2. Remove the fat from the cooled pork.
  3. Boil the chicken in a separate pot, then pour off the broth.
  4. Dice the onions and boil them in the chicken broth.
  5. Cut the potatoes into small pieces and cook them in the onion broth.
  6. Grind the cooked pork and chicken together.
  7. Mix the ground meat with the onion and potato broth.
  8. Add tomato puree to the mixture.
  9. Add pork broth as needed to reach desired consistency.
  10. Cook the mixture for a couple of hours, stirring frequently to prevent sticking.
  11. Season with salt, black pepper, red pepper, and Tabasco to taste.
