Ingredients

  • 1 lb butter
  • 2 cups sugar
  • 6 eggs
  • 4 cups self-rising flour
  • 1/2 lb candied cherries
  • 1/2 lb candied pineapple
  • 1 lb pecans

Instructions

  1. Reserve 1/2 cup of flour to coat the candied cherries, candied pineapple, and pecans.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in vanilla extract.
  5. Gradually fold in the self-rising flour, mixing just until combined.
  6. Toss the candied cherries, candied pineapple, and pecans in the reserved flour to coat them.
  7. Fold the coated candied fruits and nuts into the batter gently.
  8. Pour the batter into a prepared baking pan.
  9. Bake at 350°F (175°C) for approximately 75 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool before serving.
