Ingredients

  • 2 to 3 lb. boneless veal, cut into 1 1/2-inch cubes
  • 1/2 cup flour
  • 2 teaspoons salt
  • black pepper
  • 3 tablespoons olive oil
  • 3/4 cup sliced onion
  • 1 clove garlic, minced
  • 1/2 teaspoon dried thyme
  • 1 cup chicken broth
  • 1/2 cup tomato juice

Instructions

  1. Dredge the veal cubes in flour mixed with salt and black pepper.
  2. Heat olive oil in a large pot over medium heat.
  3. Brown the veal cubes in the oil until they are golden on all sides, then remove and set aside.
  4. In the same pot, add sliced onions and minced garlic, cooking until softened.
  5. Add dried thyme and sliced mushrooms to the pot, cooking for a few minutes.
  6. Return the veal to the pot and pour in chicken broth and tomato juice, or white wine, chicken broth, and tomato paste if preferred.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for about 1 hour or until the veal is tender.
  8. Adjust seasoning with salt and pepper before serving.
