Ingredients

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1/2 cup orange juice
  • 2 eggs
  • 1 1/2 cups sugar
  • 1 1/2 apples, pared and cored
  • 1/4 orange, peel and all
  • 1 cup raisins
  • 1 1/2 cups crushed nuts

Instructions

  1. Sift the flour, baking soda, baking powder, and salt together into a bowl.
  2. In a blender, combine the shortening, orange juice, eggs, and sugar; blend until smooth.
  3. Add the apples and orange to the blender and blend only until the fruit is chopped.
  4. Pour the blended mixture into the flour mixture and stir to combine.
  5. Add the raisins and crushed nuts, then stir into the batter.
  6. Pour the batter into a greased loaf pan.
  7. Bake at 350°F (175°C) for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
