Ingredients

  • 1 1/4 cups corn oil
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 3 cups cake flour
  • 3 cups chopped peeled apples
  • 1 cup chopped pecans
  • 2 teaspoons vanilla

Instructions

  1. Beat sugar and oil together; sift dry ingredients and add to first mixture, alternating with eggs, beating after each addition.
  2. Add vanilla and fold in nuts and apples; pour into a greased tube pan.
  3. Bake at 350°F for 1 1/2 hours.
