Decadent Rolos-filled cookies combine chocolate and caramel flavors, with a chewy exterior and gooey center, perfect for satisfying sweet cravings or entertaining guests.

Ingredients

  • 9 oz. bag Rolos
  • 2 1/2 cups flour
  • 3/4 cup cocoa
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 1 cup softened butter or margarine
  • 2 teaspoons vanilla
  • 2 eggs

Instructions

  1. Combine the flour, cocoa, and baking soda; set aside.
  2. Cream the sugar, brown sugar, and softened butter or margarine.
  3. Add vanilla and eggs to the creamed mixture and mix well.
  4. Gradually mix in the flour mixture until combined.
  5. Chill the dough for easier handling.
  6. With floured hands, shape about 1 tablespoon of dough around each Rolo, covering it completely.
  7. Roll each cookie in sugar to coat.
  8. Place on an ungreased baking sheet.
  9. Bake in a preheated oven at 350°F (175°C) for 7 to 10 minutes.
  10. Cool cookies on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
