Fresh Cranberry Cake

Ingredients

  • 2 1/2 c. flour
  • 2 c. sugar, divided
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1/4 tsp. salt
  • 1 c. buttermilk
  • 2 eggs
  • 3/4 c. oil
  • 2 Tbsp. grated orange rind
  • 1 c. nuts
  • 1 c. dates
  • 1 c. raw cranberries
  • 1 c. orange juice

Instructions

  1. Mix flour, 1 cup sugar, baking powder, soda, salt, buttermilk, eggs, oil, orange rind, nuts, dates and cranberries together. Bake at 350° for 1 hour.
  2. Cool and pour a mixture of 1 cup sugar and orange juice over cake.
  3. Drip and pour over again.
