Ingredients

  • 2 cups sugar
  • 1 cup oil
  • 2 eggs
  • 3 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • 1 1/2 cups chopped pecans
  • 3 cups peeled and grated pears or apples

Instructions

  1. Beat sugar and oil together until light and fluffy.
  2. Add eggs and mix well.
  3. Sift together dry ingredients and mix with sugar/oil mixture.
  4. Fold in grated pears or apples and chopped pecans, mixing well.
  5. Pour the batter into three buttered and floured 9-inch layer pans.
  6. Bake at 350°F (175°C) for 35 to 40 minutes or until done.
