- In a skillet over medium-low heat, cook crushed garlic for 1 minute in butter or margarine.
- In a small bowl, beat eggs, salt, pepper, and 2 tablespoons of water. Stir in chopped spinach.
- Tilt the skillet to grease the sides, then pour in the egg mixture. Cook until set around the edges.
- With a spatula, lift the edges, tilting the skillet to allow uncooked egg to flow underneath. Shake the skillet occasionally to keep the omelet moving.
- Increase heat slightly to brown the bottom of the omelet.
- Fold the omelet in half with a spatula and slide onto a warm platter. Serve immediately.
