Ingredients

  • 3 Tbsp. butter or margarine
  • 1 small garlic clove, crushed
  • 8 eggs
  • 3/4 tsp. salt
  • dash of pepper
  • 1/4 cup chopped spinach

Instructions

  1. In a skillet over medium-low heat, cook crushed garlic for 1 minute in butter or margarine.
  2. In a small bowl, beat eggs, salt, pepper, and 2 tablespoons of water. Stir in chopped spinach.
  3. Tilt the skillet to grease the sides, then pour in the egg mixture. Cook until set around the edges.
  4. With a spatula, lift the edges, tilting the skillet to allow uncooked egg to flow underneath. Shake the skillet occasionally to keep the omelet moving.
  5. Increase heat slightly to brown the bottom of the omelet.
  6. Fold the omelet in half with a spatula and slide onto a warm platter. Serve immediately.
