Ingredients

  • 1 bunch fresh spinach
  • 5 slices bacon
  • 2/3 cup oil
  • 1/4 cup garlic wine vinegar
  • 2 tablespoons white wine
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon dry mustard
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon seasoned pepper
  • 2 hard-boiled eggs

Instructions

  1. Wash well and thoroughly dry the spinach.
  2. Tear the spinach leaves into bite-sized pieces and refrigerate.
  3. In a heavy skillet, fry the bacon until crisp.
  4. Drain the bacon on paper towels and crumble.
  5. Shake the oil, vinegar, white wine, soy sauce, sugar, dry mustard, curry powder, salt, and seasoned pepper together to make the dressing.
  6. Pour the dressing over the spinach and toss lightly.
  7. Add the crumbled bacon and toss again.
  8. Top with chopped hard-boiled eggs before serving.
