- Cut strawberries into 1/2-inch pieces (about 2 cups).
- Sprinkle strawberries with 1/2 cup of sugar; set aside.
- In a large bowl, combine flour, baking soda, ground cinnamon, and salt.
- In another bowl, beat eggs; add vegetable oil and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the chopped walnuts and the sugared strawberries.
- Pour the batter into a greased loaf pan.
- Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before removing from pan and slicing.
