Ingredients

  • 1 pint strawberries
  • 1/2 cup sugar
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut strawberries into 1/2-inch pieces (about 2 cups).
  3. Sprinkle strawberries with 1/2 cup of sugar; set aside.
  4. In a large bowl, combine flour, baking soda, ground cinnamon, and salt.
  5. In another bowl, beat eggs; add vegetable oil and vanilla extract, mixing well.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Fold in the chopped walnuts and the sugared strawberries.
  8. Pour the batter into a greased loaf pan.
  9. Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before removing from pan and slicing.
