Ingredients

  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 1 Tbsp. olive oil
  • 1 lb. yellow squash, cut into 1/2-inch cubes
  • 1 lb. patty pan squash, cubed
  • 2 medium tomatoes, peeled and chopped
  • 3/4 lb. fresh green beans, cut
  • 1 1/4 c. fresh sweet corn
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In a large skillet, sauté onion and garlic in oil until tender.
  2. Add squash, tomatoes, and beans to the skillet.
  3. Reduce heat, cover, and simmer for 15 minutes or until squash is tender.
  4. Add corn, salt, and pepper to the skillet.
  5. Cook for an additional 3 minutes or until corn is tender.
