Ingredients

  • 4 boneless chicken breasts
  • 1 cup buttermilk
  • 1 cup pancake mix
  • 1 teaspoon salt
  • 1/2 stick butter
  • 1 cup water
  • 1 egg
  • small amount of pepper
  • 1 cup oil

Instructions

  1. Cut chicken breasts into small strips.
  2. In a bowl, mix buttermilk and egg.
  3. Dip chicken strips into the buttermilk and egg mixture.
  4. Pour pancake mix into a shallow dish.
  5. Coat the dipped chicken strips with pancake mix.
  6. In a pan, heat oil and butter over medium heat.
  7. Place the coated chicken strips into the hot oil and butter mixture.
  8. Sprinkle with salt and pepper.
  9. Cook until golden brown on both sides, about 3-4 minutes per side.
  10. Remove from pan and drain on paper towels.
