- Remove seeds with small knife, being careful not to split the peppers.
- Stuff each pepper with pimento cheese.
- Chill the stuffed peppers for at least 2 hours.
- In a bowl, combine 1/4 cup all-purpose flour, 2 tablespoons cornmeal, salt, pepper, and buttermilk; set aside.
- In another dish, combine the remaining flour and cornmeal.
- Dip each stuffed pepper into the milk mixture, then dredge in the flour mixture.
- Pour vegetable oil into a deep frying pan to a depth of 2 to 3 inches.
- Heat the oil to 375°F (190°C).
- Fry the peppers, a few at a time, for 1 to 2 minutes on each side, until golden brown.
- Drain the fried peppers on paper towels.
