Ingredients

  • 10 oz. canned whole pickled jalapeno peppers, drained
  • 2/3 cup pimento cheese
  • 3/4 cup all-purpose flour
  • 1/4 cup plus 2 tablespoons cornmeal
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup buttermilk
  • vegetable oil

Instructions

  1. Cut stems from peppers.
  2. Remove seeds with small knife, being careful not to split the peppers.
  3. Stuff each pepper with pimento cheese.
  4. Chill the stuffed peppers for at least 2 hours.
  5. In a bowl, combine 1/4 cup all-purpose flour, 2 tablespoons cornmeal, salt, pepper, and buttermilk; set aside.
  6. In another dish, combine the remaining flour and cornmeal.
  7. Dip each stuffed pepper into the milk mixture, then dredge in the flour mixture.
  8. Pour vegetable oil into a deep frying pan to a depth of 2 to 3 inches.
  9. Heat the oil to 375°F (190°C).
  10. Fry the peppers, a few at a time, for 1 to 2 minutes on each side, until golden brown.
  11. Drain the fried peppers on paper towels.
