Frijoles de Olla are hearty Mexican-style pinto beans simmered with fresh herbs, peppers, and ham, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 2 c. dried pinto beans
  • 1/2 onion, coarsely chopped
  • 2 Tbsp. minced garlic
  • 1/4 c. finely chopped cilantro
  • 1/4 c. chopped fresh tomatoes
  • 2 to 4 fresh chopped Serrano peppers
  • 1 c. chopped cooked ham or bacon
  • salt and black pepper to taste

Instructions

  1. Clean and soak the dried pinto beans.
  2. Drain, rinse, and place the beans in a large saucepan; cover with hot water.
  3. Bring the water to a boil.
  4. Add all other ingredients: onion, garlic, cilantro, tomatoes, Serrano peppers, ham or bacon, salt, and black pepper.
  5. Reduce heat and simmer, covered, for 4 to 6 hours or until the beans are tender, adding water as needed to keep the beans covered.
