  • 2 1/2 lb. black beans
  • 1 1/2 lb. green peppers
  • 1 1/2 lb. onions
  • 2 (8 oz.) cans pimentos
  • 2 c. olive oil
  • 1/3 c. vinegar
  • 2 tsp. sugar
  • 1 Tbsp. salt
  • 1 tsp. pepper

Instructions

  1. Soak the black beans overnight in enough water to cover.
  2. Next day, place onions and green peppers in a blender and puree until smooth.
  3. Saute the pureed mixture until the liquid is consumed.
  4. Add one can of pimentos which has been blended and half of the olive oil. Saute well.
  5. Add the mixture to the cooked beans.
  6. Stir in salt, pepper, and sugar.
  7. Allow to cook on low heat for 3 hours, until thickened.
  8. During the last hour, add the remaining olive oil, vinegar, the chopped pimentos, and an equal amount of water.
