Ingredients

  • 8 eggs
  • 1 cup shredded Swiss or Cheddar cheese
  • 1/2 cup water
  • 8 slices bacon
  • 2 teaspoons minced onions
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon pepper
  • 1 tablespoon butter

Instructions

  1. Beat together eggs, 3/4 cup cheese, water, bacon, onion, salt, nutmeg, and pepper.
  2. Melt butter in an iron 10-inch skillet over medium heat.
  3. Pour egg mixture into the skillet and cook without stirring over low to medium heat until set, about 7 to 9 minutes.
  4. Sprinkle with remaining cheese.
  5. Broil about 5 to 6 inches from heat for 2 to 3 minutes until cheese is melted and bubbly.
  6. Cut into wedges and serve.
