Ingredients

  • 1/2 box acini de pepe
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 can fruit cocktail
  • 1 cup mini marshmallows
  • 1 tablespoon flour
  • 15.5 oz can crushed pineapple, drained
  • Whipping cream, whipped

Instructions

  1. Cook acini de pepe according to package instructions; drain and set aside to cool.
  2. In a heavy saucepan, beat the egg with a wire whisk until foamy.
  3. Stir in sugar, flour, salt, and reserved pineapple juice.
  4. Cook over low heat, stirring constantly, until thickened and bubbly.
  5. In a large bowl, combine the cooked acini de pepe with the egg mixture. Chill thoroughly for about 1 hour.
  6. Stir in drained pineapple, fruit cocktail, and mini marshmallows.
  7. Fold in whipped cream until well combined.
  8. Cover and chill the salad before serving. Stir before serving.
