Ingredients

  • 2 pie crusts
  • 1 lb sausage
  • 1/4 cup chopped green onions
  • 1/2 cup picante sauce
  • 10 to 12 eggs
  • 1/2 cup milk
  • 1 cup Cheddar cheese grated
  • 1 cup Monterey Jack cheese grated
  • 1/4 cup green chillies
  • 1/4 cup sliced olives drained

Instructions

  1. Grease a 9 x 13 x 2-inch pan.
  2. Line the pan with pie crusts, fitting them to cover the bottom.
  3. Brown the sausage and chopped green onions in a skillet; drain excess fat.
  4. Layer the cooked sausage and green onions over the pie crust in the pan.
  5. Spread picante sauce evenly over the sausage and onions.
  6. In a mixing bowl, beat the eggs, then stir in the milk.
  7. Add grated Cheddar cheese, Monterey Jack cheese, green chillies, and sliced olives into the egg mixture; mix well.
  8. Pour the egg and cheese mixture over the layered ingredients in the pan.
  9. Bake at 350°F (175°C) for 1 hour or until set and golden on top.
