Ingredients

  • 3 onions
  • 1 green pepper, chopped
  • 5 Tbsp. margarine, divided
  • 1 to 1 1/2 lb. ground beef
  • 1 large can yellow hominy, drained
  • 1/4 to 1/2 tsp. chili powder
  • 1 (8 oz.) can tomato sauce
  • 1 c. scalded milk
  • 3/4 c. shredded Cheddar cheese, divided

Instructions

  1. Saute onions and chopped green pepper in 3 tablespoons of margarine.
  2. Add ground beef and cook until pink disappears.
  3. Add drained hominy, chili powder, and tomato sauce to the meat mixture.
  4. Spoon the mixture into a 2-quart casserole dish.
  5. Melt 2 tablespoons of margarine in a small pan.
  6. Stir in flour, scalded milk, and 1/2 cup of shredded Cheddar cheese.
  7. Cook and stir constantly until the cheese melts and the sauce thickens.
  8. Pour the cheese sauce over the meat and hominy mixture.
  9. Sprinkle with the remaining cheese.
  10. Bake at 350°F for about 35 minutes until bubbly and golden.
