Ingredients

  • 2 cups water
  • 2 cups raisins
  • 1 cup unsweetened applesauce
  • 2 eggs
  • 2 tablespoons liquid Sweeta
  • 3/4 cup cooking oil
  • 1 teaspoon soda
  • 2 cups all-purpose flour
  • 1 1/4 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla flavoring

Instructions

  1. Cook raisins in water until the water disappears.
  2. Add unsweetened applesauce, eggs, Sweeta, and cooking oil to the cooked raisins.
  3. Mix well to combine all ingredients.
  4. In a separate bowl, combine all-purpose flour, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to the wet mixture and mix well.
  6. Add vanilla flavoring and stir to incorporate.
  7. Pour the batter into a greased large loaf pan or two small loaf pans.
  8. Bake at 350°F (175°C) for 1 hour until a toothpick inserted in the center comes out clean.
