Ingredients

  • 8 1/4 oz. can crushed pineapple, chilled
  • 4 beaten eggs
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • 3 cups cooked macaroni
  • 1 cup whipping cream
  • 3 cups cored and diced apples
  • 1 cup tiny colored marshmallows

Instructions

  1. Drain the crushed pineapple, reserving the syrup.
  2. Combine the beaten eggs, reserved pineapple syrup, sugar, and lemon juice in a saucepan.
  3. Cook and stir over medium to low heat until the mixture thickens.
  4. Add the cooked and cooled macaroni to the mixture and stir well.
  5. Fold in the whipped cream, diced apples, and marshmallows.
  6. Cover and chill in the refrigerator overnight before serving.
