Ingredients

  • 4 c. diced and peeled apples
  • 1 c. sugar
  • 1 1/2 c. raisins
  • 1 1/2 c. walnuts
  • 2 eggs
  • 1/2 c. oil
  • 2 tsp. vanilla
  • 2 c. flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 3/4 tsp. salt

Instructions

  1. Dice and peel the apples.
  2. In a large bowl, add sugar, raisins, and walnuts to the diced apples.
  3. Let the mixture sit while preparing the rest.
  4. In another bowl, mix together the eggs, oil, and vanilla. Beat well.
  5. Add flour, baking soda, cinnamon, and salt to the egg mixture and mix until combined.
  6. Stir the egg mixture into the apple mixture until well combined.
  7. The batter will be very thick.
  8. Pour the batter into a greased muffin tin and bake at 325°F for 30 minutes.
  9. Optional: Sprinkle cinnamon and sugar on top before baking.
