Chewy, sweet fruit-nut bars combine dates, nuts, and coconut for a wholesome snack, perfect for satisfying cravings and energizing on the go.

Ingredients

  • 3/4 cup flour
  • 1 cup sugar
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup oil
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1 cup dates, chopped
  • 1 cup chopped nuts
  • 2 cups shredded coconut

Instructions

  1. Mix and sift the flour, sugar, baking powder, and salt.
  2. Make a well in the mixture and add the oil, beaten eggs, and vanilla in order.
  3. Beat until smooth.
  4. Add chopped dates, chopped nuts, and shredded coconut.
  5. Pour into a greased shallow baking dish (12 x 7 x 2 inches).
  6. Bake at 350°F (175°C) for 20 to 25 minutes.
  7. Cut into bars while warm and remove from the pan when cooled.
