Chewy fruit and nut cookies combine sweet candied fruits with crunchy nuts, offering a rich, hearty flavor perfect for holiday treats or special occasions.

Ingredients

  • 2 cups whole dates
  • 2 cups whole pecans
  • 2 cups whole Brazil nuts
  • 2 cups candied cherries
  • 2 cups candied pineapple
  • 1 pound butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 2 eggs
  • 4.5 cups flour
  • 1 teaspoon soda

Instructions

  1. Preheat oven to 350°F.
  2. Mix all dry ingredients in a large bowl.
  3. Divide the dry mixture into 4 parts and shape each into a long roll on lightly floured Saran Wrap.
  4. Place the rolls on a cookie sheet and refrigerate or freeze overnight.
  5. Add the chopped fruit to the dry mixture after mixing the dry ingredients.
  6. Slice the chilled dough into thin slices.
  7. Bake at 350°F for 12 minutes until golden brown.
