Ingredients

  • 2 tsp. soda
  • 2 c. boiling water
  • 1 c. raisins
  • 2 Tbsp. shortening
  • 3 eggs
  • 1 1/2 c. sugar
  • 2 tsp. vanilla
  • 3 1/2 c. flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 c. candied fruit
  • 1 c. chopped walnuts

Instructions

  1. Dissolve raisins in boiling water and soda.
  2. Let soak for 3 hours or overnight.
  3. In a large bowl, cream the shortening, eggs, sugar, and vanilla.
  4. Add flour, baking powder, and salt; mix well.
  5. Stir in the raisin mixture, candied fruit, and nuts.
  6. Pour into greased pans.
  7. Bake at 325°F until a toothpick inserted in the center comes out clean, about 1 hour.
