  • 5 peaches
  • 3 pears
  • 1 large onion
  • 12 tomatoes

  • 1 Tbsp. mixed pickling spice
  • 2 1/2 cups sugar
  • 1 cup vinegar

  1. Chop peaches, pears, onion, tomatoes, and celery into small pieces.
  2. Place the chopped fruits and vegetables into a large pot.
  3. Add salt, sugar, and vinegar to the mixture.
  4. Put the pickling spice in a muslin bag or spice bag and add to the pot.
  5. Cook the mixture slowly over low heat until it thickens, about 1 hour, stirring occasionally.
  6. Remove the spice bag and discard.
  7. Pour the hot relish into sterilized jars and seal.
