Fruity Couscous
Ingredients
- 3 cups chicken stock ⓘ
- 3 cups couscous ⓘ
- 1 medium red onion, finely chopped
- 2/3 cup finely chopped dried apricots ⓘ
- 7 oz red seedless grapes, halved ⓘ
- 1/2 cup dried currants ⓘ
- 1/2 cup sliced almonds, toasted ⓘ
- 1/3 cup coarsely chopped fresh flat-leaf parsley ⓘ
- None None FOR THE LEMON DRESSING ⓘ
- 1/3 cup lemon juice ⓘ
- 2 tbsp olive oil ⓘ
- 1 tsp Dijon mustard ⓘ
Instructions
- Bring stock to the boil in medium saucepan.
- Combine couscous and hot stock in large heatproof bowl; cover. Let stand about 5 mins or until liquid is absorbed, fluffing with fork occasionally.
- For the lemon dressing, whisk all ingredients in a small bowl. Season to taste.
- Add remaining ingredients to couscous. Drizzle with dressing; toss gently to combine.
