Fruity Oat-Bran Muffins

Ingredients
- 1 1/2 cups oat bran
- 1 1/3 cups quick cooking oats ⓘ
- 1 1/2 cups all-purpose flour ⓘ
- or 2/3 cup all-purpose flour and 2/3 cup whole wheat flour ⓘ
- 1/4 cup sugar ⓘ
- 2 teaspoons baking soda ⓘ
- 1 teaspoon salt ⓘ
- 2 teaspoons cinnamon ⓘ
- 2 whole eggs ⓘ
- or 1 whole egg and 2 egg whites ⓘ
- 5 to 6 ripened bananas, mashed (approximately 2 cups) ⓘ
- 1 (16 oz.) can crushed pineapple, packed in juice ⓘ
- 1/3 cup vegetable oil ⓘ
Instructions
- Combine oat bran, oats, flour(s), sugar, baking soda, salt, and cinnamon in a large bowl.
- Set aside.
- In another bowl, mix the remaining ingredients including eggs, mashed bananas, crushed pineapple, vegetable oil, honey, and vanilla extract.
- Combine the wet ingredients with the dry ingredients; do not overmix.
- Coat two 12-muffin tins with nonstick cooking spray or line with muffin cups.
- Fill each muffin cup two-thirds full with the batter.
- Bake at 375°F (190°C) for 20 minutes or until the muffins are browned.
