Ingredients

  • 1 1/2 cups oat bran
  • 1 1/3 cups quick cooking oats
  • 1 1/2 cups all-purpose flour
  • or 2/3 cup all-purpose flour and 2/3 cup whole wheat flour
  • 1/4 cup sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 whole eggs
  • or 1 whole egg and 2 egg whites
  • 5 to 6 ripened bananas, mashed (approximately 2 cups)
  • 1 (16 oz.) can crushed pineapple, packed in juice
  • 1/3 cup vegetable oil

Instructions

  1. Combine oat bran, oats, flour(s), sugar, baking soda, salt, and cinnamon in a large bowl.
  2. Set aside.
  3. In another bowl, mix the remaining ingredients including eggs, mashed bananas, crushed pineapple, vegetable oil, honey, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients; do not overmix.
  5. Coat two 12-muffin tins with nonstick cooking spray or line with muffin cups.
  6. Fill each muffin cup two-thirds full with the batter.
  7. Bake at 375°F (190°C) for 20 minutes or until the muffins are browned.
