Ingredients

  • 1 cup diced dried apricots
  • 3/4 cup diced pitted prunes
  • 1 1/2 quarts water
  • 1 stick cinnamon
  • 1 orange, thinly sliced with peel
  • 1 lemon, thinly sliced with peel
  • 1 cup sugar
  • 1/4 cup quick-cooking tapioca
  • 2 tart red apples, peeled and diced
  • 1/2 cup seedless raisins
  • 1/4 cup dried currants

Instructions

  1. Put the dried apricots, prunes, and water in a saucepan; let stand for 10 minutes.
  2. Add cinnamon, orange slices, lemon slices, sugar, and tapioca; bring to a boil, then cover and simmer for 10 minutes.
  3. Add the peeled and diced apples, raisins, and currants; cook until the apples are tender, about 5 minutes.
  4. Remove the cinnamon stick.
  5. Chill the soup.
  6. Serve cold.
