Fruktsoppa (Dessert Soup)

Ingredients
- 1 cup diced dried apricots ⓘ
- 3/4 cup diced pitted prunes ⓘ
- 1 1/2 quarts water ⓘ
- 1 stick cinnamon ⓘ
- 1 orange, thinly sliced with peel ⓘ
- 1 lemon, thinly sliced with peel ⓘ
- 1 cup sugar ⓘ
- 1/4 cup quick-cooking tapioca ⓘ
- 2 tart red apples, peeled and diced
- 1/2 cup seedless raisins ⓘ
- 1/4 cup dried currants ⓘ
Instructions
- Put the dried apricots, prunes, and water in a saucepan; let stand for 10 minutes.
- Add cinnamon, orange slices, lemon slices, sugar, and tapioca; bring to a boil, then cover and simmer for 10 minutes.
- Add the peeled and diced apples, raisins, and currants; cook until the apples are tender, about 5 minutes.
- Remove the cinnamon stick.
- Chill the soup.
- Serve cold.
