Ingredients

  • 2 lb. thinly sliced sirloin tip or eye of the round
  • 4 large tomatoes, skinned and wedged
  • 2 green peppers, slivered
  • 1 onion, chopped
  • 2 c. sliced mushrooms
  • 2 Tbsp. cooking oil
  • 1/4 c. soy sauce
  • dash of hot pepper sauce
  • salt
  • pepper
  • garlic
  • 1 can Chinese vegetables

Instructions

  1. Stir-fry strips of beef in 2 tablespoons of cooking oil in a Dutch oven.
  2. When the beef is cooked, remove it to a bowl and set aside.
  3. Add more oil to the Dutch oven if needed, then stir-fry the tomatoes, green peppers, onion, and mushrooms until tender.
  4. Season the vegetables with soy sauce, hot pepper sauce, salt, and pepper.
  5. Return the cooked beef and add the can of Chinese vegetables to the Dutch oven.
  6. Thicken the sauce with cornstarch mixed with 2 tablespoons of water.
  7. Serve the stir-fry over cooked instant rice.
