Ingredients

  • 3/4 cup melted butter
  • 1 1/2 teaspoon vanilla
  • 1/2 cup cocoa
  • 3 tablespoon vegetable oil
  • 3/4 cup finely chopped pecans
  • 1/8 teaspoon cream of tartar
  • 1 tablespoon cocoa
  • 1 1/2 cup sugar
  • 3 egg yolks
  • 1/2 cup all-purpose flour
  • 3 tablespoon water
  • 3 room temperature egg whites

Instructions

  1. Line the bottom of a 9-inch spring-form pan with tinfoil.
  2. Butter the foil and sides of the pan.
  3. Set aside.
  4. Combine 3/4 cup of melted butter, sugar, and vanilla in a large mixer bowl; beat well.
  5. Add egg yolks, one at a time, beating after each addition.
  6. Blend in 1/2 cup cocoa, all-purpose flour, vegetable oil, and water; beat well.
  7. Stir in chopped pecans.
  8. Beat egg whites, cream of tartar, and salt in a small mixer bowl until stiff peaks form.
  9. Carefully fold the egg whites into the chocolate mixture.
  10. Pour the batter into the prepared pan.
  11. Bake at 350°F for 45 minutes.
  12. Cool for 1 hour.
  13. Cover and chill until the cake is firm.
  14. Remove the sides of the spring-form pan.
