Ingredients

  • 4 chicken breasts (boneless and skinless)
  • 1 1/2 cups corn flake crumbs
  • 1/2 cup Parmesan cheese
  • 2 tablespoons parsley flakes
  • 1/2 teaspoon garlic salt
  • 2 eggs
  • 1 tablespoon water
  • 1 can mushrooms, drained
  • 1/2 cup butter, melted
  • 1 tablespoon lemon juice

Instructions

  1. Combine corn flake crumbs, Parmesan cheese, parsley flakes, and garlic salt in a shallow dish.
  2. Mix eggs and water in a separate bowl.
  3. Dip chicken breasts in the egg mixture, then roll in the crumb mixture.
  4. Heat oil in a skillet and brown the coated chicken on both sides.
  5. Remove chicken to a greased baking dish.
  6. Spoon drained mushrooms over the chicken.
  7. Melt butter and add lemon juice, then pour the mixture over the chicken and mushrooms.
  8. Bake at 350°F (175°C) for 20 to 25 minutes.
