Ingredients

  • 4 c. thin potato slices
  • 1/2 c. carrot slices
  • 1/2 c. celery slices
  • 1/4 c. chopped onion
  • 1 1/2 c. water
  • 1 chicken bouillon cube
  • dash of pepper
  • 1 c. milk

Instructions

  1. Combine potatoes, carrot, celery, onion, water, bouillon cube, and pepper in a large saucepan and bring to a boil.
  2. Reduce heat, cover, and simmer for 20 minutes until vegetables are very tender.
  3. In a small bowl, whisk milk into flour until smooth.
  4. Gradually pour the milk-flour mixture into the saucepan, stirring constantly until the mixture boils and thickens.
  5. Add processed cheese spread, heat until melted and chowder is hot.
  6. Garnish with crumbled bacon if desired.
  7. Serve hot, 1 cup per serving.
