A tangy, sweet garden relish with cabbage and peppers, perfect for adding zest to sandwiches, burgers, or served as a side for summer dishes.

Ingredients

  • 1 cup tarragon vinegar (apple cider preferred)
  • 1 cup sugar
  • 2 teaspoons salt
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon mustard seed
  • 2 cups cut up cabbage
  • 1 large sweet red pepper, cut up
  • 1 large green pepper, cut up

Instructions

  1. Combine all ingredients in a large pot and cook together for about 25 minutes.
  2. Use 6 heads of cabbage to make 6 to 7 jars of relish.
  3. Measure 2 cups of the mixture at a time.
  4. Add the other ingredients to match the 2 cups of cabbage.
