Jerk sauce delivers bold, spicy flavors with aromatic spices, peppers, and citrus, perfect for marinating meats or as a dipping sauce for a Caribbean-inspired meal.

Ingredients

  • 1 tbsp allspice
  • 1 tbsp thyme
  • 1.5 tsp cayenne pepper
  • 1.5 tsp black pepper
  • 1.5 tsp ground sage
  • 0.75 tsp nutmeg
  • 0.75 tsp cinnamon
  • 2 tbsp garlic powder
  • 1 tbsp sugar
  • 0.25 cup olive oil
  • 0.25 cup soy sauce
  • 0.75 cup white vinegar
  • 0.5 cup orange juice
  • juice of 1 lime
  • 1 Scotch Bonnet or Habanero pepper
  • 3 green onions
  • 1 cup onion

Instructions

  1. In a large bowl, combine all the spices and sugar (allspice, thyme, cayenne pepper, black pepper, ground sage, nutmeg, cinnamon, garlic powder, sugar).
  2. In a separate bowl, whisk together the olive oil, soy sauce, white vinegar, orange juice, and lime juice.
  3. Gradually add the liquid mixture to the spice mixture, stirring with a wire whisk until well combined.
  4. Add the finely chopped Scotch Bonnet or Habanero pepper and green onions, mixing well.
  5. Pour the sauce into a wide-mouth jar or container with a lid, and refrigerate overnight to allow flavors to blend.
  6. Shake well before using. Use as a marinade for chicken, beef, or pork, coating the meat and letting it sit for at least 1 hour before cooking.
  7. The sauce can be cooked any style and also served as a dipping sauce.
