Jerk Sauce
Jerk sauce delivers bold, spicy flavors with aromatic spices, peppers, and citrus, perfect for marinating meats or as a dipping sauce for a Caribbean-inspired meal.
Ingredients
- 1 tbsp allspice
- 1 tbsp thyme ⓘ
- 1.5 tsp cayenne pepper ⓘ
- 1.5 tsp black pepper ⓘ
- 1.5 tsp ground sage ⓘ
- 0.75 tsp nutmeg ⓘ
- 0.75 tsp cinnamon ⓘ
- 2 tbsp garlic powder ⓘ
- 1 tbsp sugar ⓘ
- 0.25 cup olive oil ⓘ
- 0.25 cup soy sauce ⓘ
- 0.75 cup white vinegar ⓘ
- 0.5 cup orange juice ⓘ
- juice of 1 lime ⓘ
- 1 Scotch Bonnet or Habanero pepper ⓘ
- 3 green onions ⓘ
- 1 cup onion ⓘ
Instructions
- In a large bowl, combine all the spices and sugar (allspice, thyme, cayenne pepper, black pepper, ground sage, nutmeg, cinnamon, garlic powder, sugar).
- In a separate bowl, whisk together the olive oil, soy sauce, white vinegar, orange juice, and lime juice.
- Gradually add the liquid mixture to the spice mixture, stirring with a wire whisk until well combined.
- Add the finely chopped Scotch Bonnet or Habanero pepper and green onions, mixing well.
- Pour the sauce into a wide-mouth jar or container with a lid, and refrigerate overnight to allow flavors to blend.
- Shake well before using. Use as a marinade for chicken, beef, or pork, coating the meat and letting it sit for at least 1 hour before cooking.
- The sauce can be cooked any style and also served as a dipping sauce.
