Ingredients

  • 1/4 to 1/2 cup butter or margarine
  • 1 red pepper, cut into strips
  • 1 small bunch asparagus, diagonally sliced into 1-inch pieces
  • 3/4 teaspoon seasoned salt
  • 1/4 to 1/2 teaspoon coarsely ground pepper
  • 1 cup sliced celery hearts
  • 1 zucchini, thinly sliced
  • 1 zucchini, thinly sliced

Instructions

  1. In a large skillet or wok, melt the butter over medium heat.
  2. Add the red pepper strips, celery, and asparagus slices (if used), and stir-fry for about 3 minutes.
  3. Add the sliced zucchini and continue stir-frying for 2 minutes.
  4. Stir in seasoned salt and coarsely ground pepper, and cook until vegetables are tender and flavors are combined.
