Ingredients

  • 1 lb garfish, ground or scraped
  • 3 slices bread, soaked in milk
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 clove garlic, minced
  • 1/2 cup chopped celery
  • 3 tablespoons green onion, chopped
  • 3 tablespoons parsley, chopped
  • salt and pepper to taste

Instructions

  1. Mix ground or scraped garfish with soaked bread, chopped onion, bell pepper, minced garlic, chopped celery, chopped green onion, parsley, salt, and pepper to form a mixture.
  2. Shape the mixture into balls and roll them in flour.
  3. Fry the balls in hot oil until they are browned on both sides.
  4. Remove excess grease from the pan.
  5. Make a brown roux by mixing 1 cup flour with 1 cup oil and cooking until browned.
  6. Add chopped onion to the roux and stir for 1 to 2 minutes.
  7. Add 1 to 2 cups water to the pan and bring to a simmer.
  8. Place the fried garfish balls into the gravy.
  9. Cover and cook slowly for about an hour, seasoning to taste.
  10. Serve over hot cooked rice.
