Gazpacho Dip

A refreshing, creamy gazpacho-inspired dip with fresh vegetables, olives, and green chiles, perfect for summer gatherings and served chilled with tortilla chips.

Ingredients

  • 3 Tbsp. oil
  • 1 1/2 Tbsp. cider vinegar
  • 1 tsp. salt
  • 1 tsp. garlic salt
  • 1/4 tsp. pepper
  • 1 (4 oz.) can chopped black olives and liquid
  • 1 (4 oz.) can chopped green chiles and liquid
  • 2 to 3 tomatoes, finely chopped
  • 4 to 5 green onions, finely chopped
  • 3 to 4 firm avocados, diced

Instructions

  1. Blend oil and cider vinegar until combined.
  2. Add salt, garlic salt, and pepper; stir well.
  3. Mix in chopped black olives, chopped green chiles, tomatoes, green onions, and diced avocados.
  4. Chill for several hours to allow flavors to meld.
  5. Serve cold with tortilla chips.
