Ingredients

  • 1/4 lb. bacon
  • 1/2 c. chopped onions
  • 2 c. rice
  • 2 1/2 c. red tomatoes
  • 1 c. broth (duck, chicken or turkey)
  • 1/4 c. catsup
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. Tabasco sauce (optional)

Instructions

  1. Cook bacon until crispy, then remove from pan and crumble.
  2. Cook onions in bacon fat until tender.
  3. Add red tomatoes, rice, broth, catsup, salt, pepper, and crumbled bacon to the pan.
  4. Cook on low heat until rice is done, stirring several times during cooking.
