Ginger Carrot Bisque

Ingredients

  • 1/4 cup plus 2 tbsp unsalted butter
  • 2 lb carrots, peeled and thinly sliced
  • 2 large onions, chopped
  • 1 tbsp minced peeled fresh ginger
  • 2 tsp grated orange peel
  • 1/2 tsp ground coriander
  • 5 cups chicken stock or canned broth
  • 1 cup half & half

Instructions

  1. Melt butter in a heavy large saucepan over medium heat.
  2. Add carrots and onions, cover, and cook until vegetables begin to soften, about 15 minutes.
  3. Stir in minced ginger, grated orange peel, and ground coriander.
  4. Add 2 cups of chicken stock, reduce heat to medium low, cover, and simmer until carrots are very tender, about 30 minutes.
  5. Puree the soup in batches in a processor or blender until smooth.
  6. Return the pureed soup to the saucepan, add remaining 3 cups of stock and half & half.
  7. Season with salt and pepper to taste.
  8. Reheat over medium heat until warm, then ladle into bowls.
  9. Garnish with parsley and serve.
