Ginger Chicken And Beans
Ingredients
- 4 small skinless chicken breast halves (about 6 oz. each)
- flour ⓘ
- 1 Tbsp. olive oil ⓘ
- 2 c. chopped onions ⓘ
- 3/4 c. sliced red pepper ⓘ
- 1 clove garlic, minced ⓘ
- 1/2 to 3/4 tsp. ground ginger ⓘ
- 1 Tbsp. flour ⓘ
- 1 tsp. ground allspice ⓘ
- 1/2 tsp. ground cumin ⓘ
- 1/4 tsp. nutmeg ⓘ
- 1/4 tsp. pepper ⓘ
- 1 (15 1/2 oz.) can pinto beans, rinsed and drained ⓘ
- 1 (16 oz.) can dark red kidney beans, rinsed and drained ⓘ
- 1 (15 oz.) can garbanzo beans, rinsed and drained ⓘ
Instructions
- Cut chicken breasts in halves; coat with flour.
- Cook chicken in oil in skillet or Dutch oven until brown on all sides; remove from skillet.
- Drain excess fat from skillet.
- Add onions, pepper, ginger and garlic and saute 2 to 3 minutes.
- Stir in 1 tablespoon flour, spices and pepper; saute until onions are tender, 2 to 3 minutes longer.
