Ginger Pumpkin Samosas

Ingredients

  • 1 tbsp oil
  • 2/3 lb pumpkin, finely diced
  • 2 tbsp pine nuts
  • 1 tbsp grated ginger
  • 1 tbsp finely chopped chili pepper
  • 2 cloves garlic, crushed
  • 1 tbsp chopped cilantro
  • 6 sheets filo pastry
  • 4 tbsp butter, melted

Instructions

  1. Preheat oven to 375°F. Lightly grease a baking sheet. For the filling, heat oil in a frying pan on medium. Saute pumpkin 8 mins, until tender. Add pine nuts, ginger, chili pepper and garlic. Cook, stirring, 2 mins. Mix in cilantro.
  2. Place 2 sheets of filo on a flat surface. Brush with melted butter. Cut lengthwise into 3 strips. Place 1 heaped tsp of filling onto end of each strip. Fold pastry over to form a triangle. Continue folding, keeping triangle shape, to the end. Arrange on baking sheet. Brush with butter. Repeat with remaining pastry and filling. Bake 10-15 mins, until golden and crisp. Serve immediately.
