Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup cornstarch
  • 2 tablespoons ground ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 sticks butter, softened
  • 2/3 cup packed brown sugar
  • 1/4 cup molasses
  • 2 tablespoons crystallized ginger, finely chopped
  • 2 tablespoons coarse decorating sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a 13 x 9-inch baking pan with foil and spray with cooking spray.
  2. In a mixing bowl, combine flour, cornstarch, ground ginger, cinnamon, white pepper, ground cloves, and salt.
  3. In another bowl, beat the softened butter until creamy.
  4. Add brown sugar and molasses to the butter, beating until smooth.
  5. Gradually add the flour mixture to the butter mixture, beating until smooth.
  6. Spread the dough evenly into the prepared pan.
  7. Sprinkle the finely chopped crystallized ginger over the top.
  8. Bake in the preheated oven for 15 minutes.
  9. Remove from oven, sprinkle with coarse decorating sugar, and bake for an additional 10 minutes.
  10. Cool in the pan. Once cooled, cut into thirds lengthwise, then crosswise into 12 one-inch strips.
