Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 2 teaspoons baking powder
  • 1 cup blanched almonds (optional)
  • 3 eggs
  • 1 cup oil
  • 1 3/4 cups sugar
  • 1 pint lemon yogurt
  • 1 tablespoon lemon extract

Instructions

  1. Sift flour, salt, soda, and baking powder together.
  2. Stir in the blanched almonds if using and set aside.
  3. Beat eggs in a large bowl.
  4. Add oil and sugar to the eggs and beat well.
  5. Add lemon yogurt and lemon extract, mixing thoroughly.
  6. Combine the wet ingredients with the dry ingredients until just incorporated.
  7. Beat the mixture thoroughly to ensure even blending.
  8. Pour batter into a large Bundt pan and bake at 350°F for 60 minutes.
  9. Test the bread with a toothpick to check for doneness.
  10. Cool on a rack for 10 minutes before removing from the pan.
