Ingredients

  • 1 c. white flour
  • 3/4 c. wheat flour
  • 1/4 c. sugar
  • 1/4 c. brown sugar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 3/4 c. buttermilk
  • 1/3 c. oil
  • 1 egg
  • 1 egg white

Instructions

  1. Combine dry ingredients in a large bowl; set aside.
  2. In a separate large bowl, mix buttermilk, oil, egg, egg white, and molasses.
  3. Add the wet mixture to the dry ingredients and stir lightly; do not overmix.
  4. Drop the batter into muffin tins.
