Gingered Carrots And Apples

Ingredients
- 1 lb. carrots, sliced ⓘ
- 1 Tbsp. margarine or 1/4 to 1/2 cup vegetable broth or defatted chicken broth ⓘ
- 1/3 cup finely chopped onion ⓘ
- 2 medium Golden Delicious apples, peeled and thinly sliced ⓘ
- 1/2 cup unsweetened apple juice ⓘ
- 2 tsp. brown sugar or white sugar ⓘ
- 1 tsp. lemon juice ⓘ
- 1/2 tsp. ginger ⓘ
- dash of nutmeg ⓘ
- dash of salt (optional) ⓘ
Instructions
- Put carrots in a pan of boiling water and simmer until just tender and crisp, or steam the carrots.
- Do not overcook.
- Saute onion in margarine or broth for 2 to 3 minutes.
- Add sliced apples and saute for 4 to 5 minutes.
- Add apple juice, carrots, sugar, lemon juice, salt, nutmeg, and ginger.
- Cover and simmer for 4 to 5 minutes.
