Ingredients

  • 1 lb. carrots, sliced
  • 1 Tbsp. margarine or 1/4 to 1/2 cup vegetable broth or defatted chicken broth
  • 1/3 cup finely chopped onion
  • 2 medium Golden Delicious apples, peeled and thinly sliced
  • 1/2 cup unsweetened apple juice
  • 2 tsp. brown sugar or white sugar
  • 1 tsp. lemon juice
  • 1/2 tsp. ginger
  • dash of nutmeg
  • dash of salt (optional)

Instructions

  1. Put carrots in a pan of boiling water and simmer until just tender and crisp, or steam the carrots.
  2. Do not overcook.
  3. Saute onion in margarine or broth for 2 to 3 minutes.
  4. Add sliced apples and saute for 4 to 5 minutes.
  5. Add apple juice, carrots, sugar, lemon juice, salt, nutmeg, and ginger.
  6. Cover and simmer for 4 to 5 minutes.
