Ingredients

  • 2 cups sugar
  • 1 1/2 cups Crisco oil
  • 3 eggs
  • 3 cups plain flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 4 cups fresh apples, diced
  • Juice of 1 lemon
  • 1 cup black walnuts, chopped

Instructions

  1. Combine sugar and oil in a mixing bowl.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift together the dry ingredients: flour, cinnamon, soda, nutmeg, allspice, ground cloves, and salt.
  4. Gradually add the dry mixture to the egg mixture, mixing until just combined.
  5. Stir in vanilla extract.
  6. Sprinkle diced apples with lemon juice and fold into the batter along with chopped walnuts.
  7. Pour the batter into a greased and floured tube or Bundt pan.
  8. Bake at 325°F (163°C) for 75 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool for 15 minutes before removing from the pan.
  10. Top with caramel glaze before serving.
