Ingredients

  • 1 (10-inch) unbaked pie crust
  • 2 1/2 cups fresh peaches
  • 1 1/4 cups sugar
  • 2 tablespoons flour
  • 2 eggs
  • 1/2 cup butter
  • 2 tablespoons tapioca

Instructions

  1. Line a 10-inch pie plate with the unbaked pie crust.
  2. Sprinkle tapioca over the crust.
  3. Spread sliced peaches over the crust and sprinkle half the sugar over the peaches.
  4. Mix the remaining sugar with flour and melted butter.
  5. Add the well-beaten eggs to the mixture and mix well.
  6. Pour the mixture over the peaches in the crust.
  7. Bake at 375°F for 35 minutes or until the custard is set.
