Ingredients

  • 8 c. unbleached white flour
  • 2 1/2 to 3 c. water
  • 4 c. vegetable water
  • 1/2 c. tomato juice
  • 3 Tbsp. oil
  • 2 c. chopped onion
  • 6 Tbsp. soy sauce
  • 1 tsp. salt

Instructions

  1. Mix the unbleached white flour with enough water to form a stiff dough.
  2. Form the dough into a ball and knead it for about 10 minutes.
  3. Place the dough in a bowl and cover it with additional water.
  4. Let it stand for 30 minutes or overnight.
  5. Knead the dough with your hands under water to wash out the starch.
  6. Pour off the starchy water and cover the dough with more water.
  7. Continue washing until the water is almost clear.
  8. You now have concentrated gluten to make the steaks.
